Roasted Pumpkin & Kumara Soup with Kiki Seed Crackers

Ingredients:

  • ½ pumpkin, peeled and chopped
  • 1 large orange kumara, peeled and chopped
  • 1 brown onion, quartered
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 litre vegetable stock
  • Salt and pepper, to taste
  • Coconut cream (optional, for swirling)
  • Kiki Seed Crackers, for topping

Instructions:

1. Roast Your Veggies:
Preheat your oven to 200°C fan bake. Arrange the chopped pumpkin, kumara, onion, and garlic cloves on a baking tray. Drizzle with olive oil, then sprinkle with cumin, paprika, salt, and pepper. Toss everything to coat evenly and roast for 30–35 minutes until golden and tender.

2. Simmer with Stock:
Transfer the roasted vegetables, including the garlic, into a large pot. Pour in the vegetable stock and bring to a gentle simmer. Let it bubble away for 5–10 minutes to allow the flavours to meld beautifully.

3. Blend Until Smooth:
Using a stick blender (or a countertop blender in batches), blend the soup until smooth and creamy. Adjust seasoning to taste with more salt and pepper, if needed.

4. Serve with a Crunchy Twist:
Ladle the soup into bowls and swirl in a spoonful of coconut cream if you’re using it. Finish with a generous handful of crushed Kiki Seed Crackers over the top for that irresistible crunch and nutty finish.
