Garlic Herb Roasted Olives on Honey Whipped Feta

This Honey Whipped Feta with Garlic Herb Roasted Olives is the ultimate easy appetiser for entertaining. Creamy whipped feta with a touch of honey is topped with warm roasted olives, garlic, shallot and fresh herbs for a delicious sweet, salty and savoury bite.

Ingredients

For the roasted olives

  • 270g mixed olives, pitted
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic, smashed
  • 1 shallot, quartered
  • 1 lemon, quartered
  • 2 sprigs fresh thyme
  • Chilli flakes, to taste

For the honey whipped feta

  • 225g feta, crumbled
  • 85g cream cheese, at room temperature
  • 2 tablespoons honey
  • Black pepper, to taste

To serve

  • Your favourite flavour of Kiki crackers!

Method

1. Preheat your oven to 220°C.

2. Add the olives, olive oil, garlic, shallot, lemon, thyme and a generous pinch of chilli flakes to a baking dish. Roast for 20–25 minutes, until the garlic is golden and the oil is bubbling and fragrant.

3. While the olives are roasting, make the whipped feta. Add the feta, cream cheese, honey and black pepper to a food processor and blend until smooth and creamy.

4. Spoon the whipped feta onto a serving plate or shallow bowl. Top with the warm roasted olives and spoon over the herby oil from the baking dish.

5. Serve with your favourite type of Kiki crackers for an easy and delicious entertaining platter recipe.


Tips for the perfect Honey Whipped Feta with Garlic Herb Roasted Olives

  • Use a mix of green and black olives for the best colour, flavour and presentation.
  • Make the whipped feta ahead of time and store it in the fridge for up to 3 days. Let it come back to room temperature before serving for the best texture and flavour.
