GF Seedy Anzac Biscuits

I had a crazy thought.  I wonder if I can make Gluten Free ANZAC Biscuits with Kiki Mix. And guess what ...the answer is yes!  The result is a light, crispy, seedy gluten free ANZAC biscuit! 

If you’re after an easy baking recipe for ANZAC Day, weekend baking or kids lunchboxes, this one ticks all the boxes. It’s a nostalgic favourite made better with the added goodness of the Kiki seed mix in every bite.


Ingredients

1 pack Sea Salt Kiki Mix (Fennel Seed would also be delicious)
½ cup rice bubbles
1 cup desiccated coconut
½ cup brown sugar
½ cup chopped walnuts (optional)
150g butter (or Vutter for dairy free)
3 Tbsp maple syrup or golden syrup
1 tsp baking soda
1 Tbsp boiling water

NB if you can tolerate oats, replace the 1 pack of Kiki mix and 1/2 cup rice bubbles with: 1 cup of Kiki Mix and 1 cup of rolled oats


Method

  1. Preheat your oven to 180°C fan bake and line a baking tray.
  2. In a large bowl, mix together all the dry ingredients.
  3. In a small saucepan, melt the butter and maple syrup (or golden syrup) together until bubbling then remove from the heat.
  4. Dissolve baking soda in the boiling water.  Add to the butter and syrup mixture and stir gently. It will fizz up and become frothy.
  5. Pour the wet mixture over the dry ingredients and mix well to combine. If the mixture feels a little dry, add a small splash of water to bring it together.
  6. Spoon portions onto your prepared tray and flatten into biscuit shapes.
  7. Bake for 12–15 minutes, until golden brown and crisp. Allow to cool on the tray to firm up and store in an airtight container. 

Easy Tray Bake Option (our favourite)

For an even easier method, press the entire mixture onto one lined tray to form one big rectangle biscuit (this will fully cover the tray). 

Bake as above, then while still warm, gently cut into squares or rectangles. Once cooled, snap into biscuits.


Tips for the best Gluten Free Anzac Biscuits

  • Don’t skip flattening, this helps create that classic thin, crispy texture
  • Let them cool completely for maximum crunch
  • Store in an airtight container in the fridge for weeks (but they won't last that long!)

These gluten free seedy Anzac biscuits are the perfect mix of nostalgic and nourishing. Simple and crunchy that’s just as good with a cup of tea as it is straight from the tin.
