Kiki Nachos with Fresh Salsa
Who says nachos need corn chips? Our Kiki Nachos are a fresh take on a family favourite, featuring a Mexican style bean mix, melted cheese and homemade salsa for an easy and satisfying dinner. Perfect for entertaining or a weeknight dinner, they're loaded with flavour and come together in under 30 minutes.
Ingredients
Mexican Bean Mix
- 1 tbsp olive oil
- 1 red onion, diced (keep half for the salsa)
- 1 carrot, grated
- 2 garlic cloves, crushed
- 1 capsicum, diced
- 2 x cans Mexican style 3 bean mix, drained
- 1 x 400g can tomatoes
- 1 tsp Tio Pablo Chipotle Seasoning (use more or less depending on your heat preference)
- Salt, to taste
Fresh Salsa
- ½ red onion, finely diced
- 2 fresh tomatoes, diced
- Juice of ½ lemon
- Handful of coriander, finely chopped
- Salt, to taste
To Serve
- Grated cheese
- Sour cream
- Sliced jalapeños
- Extra coriander
- Kiki crackers
Method
1. Heat the olive oil in a large frying pan over medium heat. Add half of the diced red onion, grated carrot and crushed garlic. Cook for 3–4 minutes until softened and fragrant.
2. Add the capsicum and cook for a further 2–3 minutes.
3. Stir through the drained 3 bean mix, canned tomatoes and Tio Pablo Chipotle Seasoning. Season with salt and mix well. Simmer for 5–10 minutes, stirring occasionally, until thickened slightly and heated through.
4. Meanwhile, make the salsa. Combine the remaining red onion, diced tomatoes, lemon juice, coriander and a pinch of salt in a bowl. Mix well and set aside.
5. Preheat your oven to 180°C fan bake.
6. Spoon some of the Mexican bean mixture into a small ovenproof dish and top generously with grated cheese. Bake for 5 minutes, or until the cheese has melted and is bubbling.
7. Remove from the oven and sprinkle with extra coriander.
8. Serve alongside Kiki crackers, fresh salsa, sour cream and sliced jalapeños for dipping and scooping.
