Pumpkin Chickpea Hummus

This quick & easy Pumpkin Hummus layered with subtle smoky flavour and spices is a delicious patter addition, especially when pumpkin is in abundance. 

INGREDIENTS

1 can chickpeas drained and rinsed
1 cup roasted pumpkin
2 medium garlic cloves, minced
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chilli flakes
3 tablespoons tahini
Juice of 1 lemon
salt & pepper to taste

METHOD

Add all ingredients to a food processor and blend together until smooth & creamy (or use a bowl and mixing wand).  If dip feels too thick, add some cold water to get the desired consistency.

Transfer to a serving bowl and enjoy with your favourite Kiki crackers as a healthy snack or on a platter.

Store  in the fridge for up to 5 days.  Best served at room temperature so bring out beforehand or microwave for 15 seconds.
