Tash's Legendary Cheeseball

This is an easy platter that everyone will rave about!  Tash from Platters By Tash has kindly shared her legendary cheeseball recipe for you all to enjoy. It is creamy, cheesy, crunchy and packed with flavour. Made with cream cheese, tasty cheese, pickles, chutney and fresh herbs, it's the perfect addition to any grazing platter.

Serve alongside freshly baked Kiki Seed Crackers, crisp vegetable sticks & seasonal fruit for a crowd-pleasing platter that's guaranteed to disappear quickly.

Prep Time: 20 minutes (plus chilling time)
Serves: 8–10


Ingredients

  • 250g cream cheese, softened
  • 100g tasty cheese, grated
  • 80g good quality piccalilli (can substitute with your favourite chutney or relish)
  • 5g Worcestershire sauce
  • 5g garlic powder
  • 50g cornichons or dill pickles, finely diced
  • 30g roasted salted peanuts, roughly chopped
  • 5g fresh parsley, dill or chives (or a combination), roughly chopped

Method

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the piccalilli, Worcestershire sauce and garlic powder, mixing until well combined.
  3. Fold through the grated cheese and diced pickles.
  4. Lay a sheet of cling film on your bench and spoon the mixture into the centre. Shape into a ball, then wrap tightly in the cling film.
  5. Refrigerate for at least 3 hours, or overnight, until firm.
  6. Combine the chopped peanuts and fresh herbs on a chopping board or plate.
  7. Remove the cheeseball from the cling film and gently roll it through the nut and herb mixture until evenly coated.
  8. Place on a serving platter and enjoy with freshly baked Kiki Seed Crackers, crudités and your favourite antipasto ingredients.

Don't be afraid to make this recipe your own. Swap the piccalilli for your favourite chutney, relish or caramelised onion jam for a delicious new twist every time.
