Impress your guests or feed a crowd, everyone is going to love these Kiki Tostadas! The lovely Charlotte introduced us to these one Christmas and they've been a winner ever since. Fun to assemble and can be whipped up in no time.
INGREDIENTS
Wasabi mayo - mix together 1/2 cup mayo, 2 tsp wasabi paste & a squeeze of lemon juice
Avocado - sliced
Cherry tomatoes or 1 regular tomato -finely chopped
Protein of choice - tuna, smoked salmon, prawns or tofu cut into small chunks.
(We have used fresh tuna marinated in soya sauce, sesame oil, sesame seeds and lime juice)
Red onion (fresh or pickled) thinly sliced
Garnish - toasted sesame seeds, fresh herbs eg coriander or basil
METHOD
Break Kiki seed crackers into bite sized pieces approx 5cm x 6cm
Top each piece with a dollop of wasabi mayo
Add avocado & chopped tomato
Add chosen protein
Sprinkle with toasted sesame seeds
Top with red onion and herbs
Buen provecho! Serve on a platter and enjoy!
