Quick Pickled Red Onions

Pickled red onions add next level flavour to any topping or salad. 

They are so quick and easy to do, and this simple recipe is especially great when you need them pretty much straight away. 

INGREDIENTS

1 red onion
1/2 cup water
1/2 cup white vinegar - apple cider is nice but any vinegar is fine
1 tsp salt
1 tsp sugar

METHOD

Thinly slice the red onion and cram into a medium sized jar with a lid (big enough to fit one cup of liquid)
Add water, vinegar, sugar and salt to the jar - onions should be fully covered. If not, add more equal parts water & vinegar. 
Gently shake everything together for 30 secs to dissolve the sugar & salt, and then let sit for 5-10 minutes (or longer if you have time).

And there you have it... Sweet & tangy picked red onions ready to enjoy in minutes. 

Store in the fridge for up to 2 weeks.
