This Roast Kumara & Vege Salad is a vibrant mix of caramelised vegetables, fresh greens, and punchy pesto — all topped with rustic shards of Kiki Seed Crackers for a satisfying crunch. It’s perfect as a light lunch, a side dish, or a meat-free main that doesn’t skimp on taste or texture.
Ingredients:
For the roast veg:
- 1 medium kumara (orange or red), peeled and cubed
- 2 medium potatoes, peeled and cubed
- 1 red onion, cut into chunky wedges
- 1 red capsicum, chopped into strips
- 2 tbsp olive oil
- Salt and pepper, to taste
For the salad base:
- 3 large handfuls of baby spinach
- ¼ cup toasted pine nuts
- ½ cup basil pesto
- Zest of ½ a lemon
For the crispy topper:
- 4–5 Kiki Seed Crackers, crushed into rustic shards
Instructions:
1. Roast the Veggies:
Preheat your oven to 200°C (fan bake). Toss the kumara, potato, onion, and capsicum in olive oil, season with salt and pepper, and spread on a lined tray. Roast for 30–35 minutes, turning halfway, until everything is golden and caramelised.
2. Build the Salad:
In a large serving bowl, layer the baby spinach, warm roasted vegetables, toasted pine nuts, and basil pesto. Gently toss everything together until well coated. Add a sprinkle of lemon zest for a burst of freshness.
3. Top with Kiki Crunch:
Just before serving, scatter over the crushed Kiki Seed Crackers. Their nutty flavour and crisp texture add the perfect final touch — turning a simple roast salad into something extra special.
