Sweet & Spicy Rosemary Bar Nuts

A mixture of different nuts are toasted and tossed with butter, coarse sea salt, a little sugar, fresh rosemary and spices for the perfect sweet and savoury addition to your platters!  The result is deliciously addictive and guaranteed to impress. 
Whip up in 10 minutes and serve warm, or store in an airtight container for later. 

Ingredients

4 cups of natural unsalted nuts - use whatever you like eg peanuts, cashew, brazil, pistachio, walnuts, almonds, pecans, hazelnuts
2 Tbsp coarsely chopped fresh rosemary
2 tsp brown sugar
2 tsp coarse sea salt or rock salt
1/2 tsp cayenne pepper (or 1 tsp smoked paprika for a sweet & smoky flavour)
1-2 Tbsp melted butter

Optional: chilli flakes for an extra kick

Method

Preheat oven to 180°C (350°F).

Toss the nuts in a large bowl to combine and spread out onto a lined baking tray. Toast carefully in the oven until light golden brown (10-12 minutes).

In the same bowl, combine the rest of the ingredients.  Add the toasted nuts and toss in the spiced butter until thoroughly coated. 

Serve warm & garnished with extra rosemary.  Or cool & store in an airtight container. Enjoy!
